Parents are always asking for our recipes. Our Chefs are the true all-stars for one of our favorite meals, which we call Favorite Chicken. Here is the recipe and instructions for how to make it!
Servings: 4
Ingredients: 4 large chicken breasts salt & pepper to taste 2 eggs 1 cup Italian bread crumbs 8 cloves of garlic (minced) 4 tablespoons butter 4 tablespoons olive oil 1 half-cup of capers with juice 4 whole ripe lemons
Preparation Pound chicken breasts with a mallet until they are ¼ inch thick.
Whip eggs in a bowl. Pour bread crumbs onto a plate.
Dip chicken breast in whipped eggs, then coat both sides in Italian bread crumbs.
Lightly salt and pepper both sides of chicken breast. Set aside.
Melt 1 tablespoon butter and 1 tablespoon olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute. You want your garlic to brown, not burn!
Add 1 chicken breast and cook for 2-3 minutes on one side. Flip chicken breast to the other side. Cook for one minute.
Add 1 tablespoon of capers. Then squeeze juice from one lemon (or freshly squeezed lemon juice) on to the chicken breast. Be careful when oil starts to sizzle! Top the skillet with a lid as chicken breast continues to cook for one more minute.
**If you have a large skillet and are able to cook all 4 chicken breasts at one time, add all 4 tablespoons of olive oil, 4 tablespoons of butter, 4 lemons and a half cup of capers.
Remove chicken breast and keep warm in the oven as you cook the remaining pieces of chicken, repeating steps 5 and 6.
